Start by chopping the bacon into small pieces while you drizzle a healthy slug of olive oil into a large frying pan. Cook on med-high for about 5 minutes or until the bacon starts to brown, and add your salad onions. Cook for another minute.
Add your handful of kale - careful, it'll start to spit. a bit! Stir well so the bacon is covered in oil and starting to cook.
After a couple of minutes move the kale to the outside of the pan so there's a hole in the middle where the egg can fit. Crack the egg into the hole and cook until done - I like my yolk runny. Sprinkle both salt and pepper on the top to taste.
